Ingredients

  • 250g punnet strawberries, hulled, halved or quartered
  • 600g piece seedless watermelon, skin removed, chopped
  • 250g cherries, pitted, halved

Mint and lime syrup

  • Zest and juice of 1 lime
  • 2 tablespoons Chelsea Icing Sugar, sifted
  • 2 tablespoons water
  • 2 tablespoons finely shredded mint leaves

Method

Mint and lime syrup: Put the lime zest and juice, Chelsea Icing Sugar and water in a small saucepan. Stir over low heat until the sugar dissolves. Increase heat to high and simmer for 2 minutes or until the syrup reduces and thickens slightly. Stir in the mint leaves. Set aside for 5 minutes.
Put the fruit in a large bowl. Toss to combine. Drizzle over the syrup and toss to combine. Set aside for 15 minutes to allow the flavours to develop.
Divide the fruit between serving bowls. Serve!
