  • 1 cup sifted self raising flour
  • 1/4 cup cocoa
  • 1 egg
  • 1 cup Chelsea Soft Brown Sugar
  • 1 tsp vanilla essence
  • 1/2 cup coconut
  • 125g butter

Icing

  • 1 tablespoon melted butter
  • 2 tablespoon sifted cocoa
  • 1 cup sifted Chelsea Icing Sugar

Method

Melt the butter in a saucepan over medium heat. Stir in Chelsea Soft Brown Sugar. Remove from heat and add vanilla and egg. Mix well. Stir in cocoa flour and coconut. Place in a well greased slice pan and bake 180 degrees for approximately 25 minutes or until cooked when tested. Ice while hot. Sprinkle extra coconut over icing.
ICING mix all ingredients together.
Add hot water by the tablespoon until the icing is soft enough to spread.
Cut into squares when cold.
