  • 25g butter
  • 140g chocolate
  • 5 egg whites

  • Pinch of salt

Method

Preheat oven to 190°C. Grease 2 soufflé ramekins with butter, then coat with Chelsea Caster Sugar.
Soufflé : Beat egg yolks with 75g of Chelsea White Sugar and then add the flour. Boil milk and butter in a thick bottom pot and pour onto the yolk mixture. Mix well.
Pour back into the pot and cook gently over a low flame until very thick. Stir continuously then remove from heat.
Add chocolate and mix until it has melted. Place the custard in the fridge for 10 minutes.
Whisk egg whites and 125g of Chelsea White Sugar in a bowl until stiff. Fold in 1/3 of the egg white mixture at a time to the custard.   Carefully fill the ramekins to 3/4 full.
Bake for 8 to 10 minutes, until puffed and golden brown.
Dust with Chelsea Icing Sugar to serve.
