How do you make Belgian waffles? Try this light and delicious recipe.
Sift the flour, baking powder, salt and Chelsea White Sugar together into a large bowl. Stir to combine.
Place the egg whites in a small bowl and beat until stiff.
In a jug, whisk together the egg yolks, milk and oil. Add to dry ingredients and whisk briefly until just smooth. Fold in the beaten egg whites.
Heat a waffle iron and cook waffles until golden brown. Serve warm with fresh fruit, cream and Chelsea Maple or Honey Maple Flavoured Syrup.
To keep Belgian waffles crispy, place them on a wire rack in a warm oven (around 100°C) instead of stacking them. Avoid covering them, as steam will make them soft.
If your Belgian waffles are too dense, it could be due to overmixing the batter or not using enough leavening. For extra fluffiness, try folding in beaten egg whites or letting a yeast-based batter rest before cooking.
