  • 3 very ripe bananas
  • 1 ½ cups Edmonds Standard Grade Flour (225g)
  • 1 cup Chelsea White Sugar(225g)
  • 65g butter, melted
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tsp Edmonds Baking Soda
  • ½ tsp Edmonds Baking Powder

Topping (optional)

  • 1 ripe banana, peeled and sliced into 2 long halves
  • 2 Tbsp Chelsea Coffee Sugar Crystals

Method

Grease a loaf tin (approximately 22-24cm x 13cm) and line with baking paper. Preheat oven to 180°C bake.
Peel bananas and place in a large bowl. Mash well.
Add all other ingredients and stir to combine. Pour into prepared loaf tin.
If adding the topping, place sliced banana halves on top and sprinkle with Chelsea Coffee Sugar Crystals.
Bake for 50-60 minutes, or until a skewer inserted in the centre comes out clean. Leave to cool in tin for 10 minutes before turning out onto a wire rack to cool completely.
