Method

Sift flour, baking powder and salt into a large bowl. Stir in sugar.

Place butter in a separate heatproof jug or bowl and microwave in short bursts until melted. Add milk and egg and whisk to combine.

Pour the milk mixture into the flour mixture and whisk until you have a smooth batter. Let the batter stand for a few minutes.

Heat a knob of butter in a large non-stick frying pan over medium heat. Once melted and bubbling, spoon 1/4 cup measurements of batter into pan (mixture will be quite thick - gently spread out a little with the back of a spoon if needed). When bubbles have formed on top of the pancakes (about 2 minutes), flip over and cook for a further 1-2 minutes, until golden brown and cooked through.

Repeat until all the batter is used up. Pancakes can be kept warm in a low oven if needed.

Serve with lashings of maple syrup and extra butter, if desired.
