  • 1 Tbsp cocoa powder + extra to serve
  • pinch of salt
  • 1 1/2 Tbsp Chelsea Soft Brown Sugar
  • 1 Tbsp butter (15g)
  • 2 Tbsp milk (30ml)
  • 1 egg
  • 1/4 tsp vanilla extract
  • 1 Tbsp chocolate chips (optional)

Method

Sift flour, cocoa powder and salt into a small bowl. Stir in sugar.

Place butter in a small heatproof jug and microwave until just melted. Add milk, egg and vanilla and whisk with a fork until combined.

Add wet ingredients to dry ingredients and stir until just combined.

Spoon into a mug (at least 300ml capacity). Sprinkle with chocolate chips, if using. 

Microwave on high for 70-90 seconds, or until cake has risen and the top is just set. Do no overcook.

Dust with extra cocoa powder and serve immediately.
