My new favorite muffin recpie. I make these as Texas muffins and add half a cup of chocolate chips and take away 1/4 cup of sugar. I keep them in the freezer then take one out every morning and pop in in the microwave for breaky on the run.
Preheat oven to 200°C. Mix all dry ingredients in a bowl. Beat eggs, melted butter and milk together with the bananas. Add dry ingredients and mix together to just combine.
Spoon into greased muffin tins and bake for 10 - 15 minutes.
We added cinnamon and next time another half cup of sugar.
