Preheat oven to 180°C. Place 12 paper cases inside the cups of a tray of 12 muffin tins.
Mix previously combined wet ingredients into the dry ingredients until just lightly combined. Don't over mix or the muffins will be quite tough and solid. Spoon mixture into the paper cases.
Bake for 20 - 25 minutes until lightly golden brown. Cool on a wire rack.
We've topped ours with a little cream cheese icing!
