Part I Candied bacon

• 6 lengths of streaky bacon
• 100 g CHELSEA soft brown sugar

Part II Cupcake

• 163 g unsalted, softened butter
• 125 g CHELSEA caster sugar
• 32g CHELSEA dark cane sugar
• 3 large free range eggs
• 4 rashers of candied bacon/chopped
• 156g self raising flour
• Pinch of salt
• 2 Tbsp whole milk
• ½ tsp vanilla paste

Part III Maple Buttercream

• 187g softened, unsalted butter
• 425 g sifted CHELSEA icing sugar
• ½ tsp vanilla paste
• 4-6 Tbsp CHELSEA maple flavoured syrup

• 1½ cups ground almonds
• ¼ cup tapioca flour
• 2 teaspoons ground ginger
• ½ teaspoon ground cinnamon
• ⅛ teaspoon fine sea salt
• ¼ teaspoon baking soda
• 2 Tablespoons melted coconut oil
• ¼ cup Chelsea Maple Flavoured Syrup
• 1 tablespoon Chelsea Blackstrap Molasses
• 1 tablespoon coconut flour
• Extra arrowroot or tapioca starch, for rolling & cutting
• 1 cup cacao butter
• ¼ cup Chelsea Maple Flavoured Syrup or Chelsea Organic Coconut Sugar

• 1 cup each diced fresh or canned peaches, diced fresh mango
• 2 tablespoons passionfruit pulp
• 1 cup diced strawberries
• 1 cup Chelsea Maple Flavoured Syrup
• 2-3 tablespoons brandy or sherry
• ½ cup fruit juice
• 1 medium sponge (about 20cm)
• 1 litre vanilla bean custard (home-made or good-quality store-bought)
• 150 ml whipped cream

For the Almond Clusters

• 1 cup Chelsea Maple Flavoured Syrup
• ½ cup almonds

• 2 -3 potatoes, cut into 4-5cm pieces
• 1 large sweet potato, peeled and cut into 4-5cm pieces
• 2 parsnips, peeled and cut into 8cm long pieces
• 3 beets, peeled and cut into 4-5cm pieces
• 2 large sweet onions, peeled,quartered
• ½ cup olive oil
• ⅓ cup Chelsea Easy Pour Maple Flavoured Syrup
• 3 cloves garlic, peeled,minced

• 1 pre-cooked ham (8-10kg)
• 20-30 whole cloves
• ½ cup Chelsea Maple Flavoured Syrup or Chelsea Honey Maple Flavoured Syrup
• ½ cup Chelsea Dark Cane Sugar
• 220g crushed pineapple in syrup, undrained
• 2 Tbsp wholegrain mustard
• 1 Tbsp lemon juice

Pancakes

• 2 cups Edmonds Self Raising Flour
• ¼ cup Chelsea Caster Sugar
• ½ tsp vanilla essence
• 1 egg
• 2 cups Meadow Fresh Milk
• Red food colouring
• Tararua Butter to grease frypan
