Welcome to the Chelsea Sugar Recipe Club
Baking and sharing food with family and friends is one of the simple pleasures
of life. Great to celebrate special occasions or to enjoy with a cuppa, home
baking filling the tins never fails to impress ...and has the added bonus of
being inexpensive and you know just what’s gone into the baking.
As the balance of nutrition and exercise is so important to our well-being,
having some control over the ingredient quantity and quality you use is more
important than ever. This is true of portion size also. At least if you’re
baking the muffins, you can make them smaller than the gigantic cafe size often
found these days. Mini bite size muffins, slices cut into cubes or cup cakes
are small enough to still be enjoyed and satisfy that sweet tooth without
adding large amounts of extra energy.
Sharing recipes and handy tips is also fun, and a great way to pass these
important baking skills down through the generations. We’re now developing more
recipes that have less energy/calories and are both sweet and savoury uses for
sugar – remember, a little bit of sweetness changes everything!

Melting chocolate

Care must be taken when melting chocolate or you can easily end up with a grainy mess. The lighter the chocolate, the higher the chances of this happening. The most important thing to remember is that chocolate melts better and faster at lower temperatures. Never let your chocolate get above 40ºC. If you recipe calls for you to melt chocolate with a liquid (water or cream), make sure the liquid is mixed right from the beginning of the melting process. Don’t try to add the liquid half way through the process.
